These vegan oatmeal muffins are so good you’ll go to sleep thinking about having them for breakfast the next day. And they are so simple to make!!


  • 3 cups rolled oats 
  • 3/4 cup raw cashews
  • 1/4 cup maple syrup
  • 1/4 cup unrefined sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/2 tsp baking soda
  • 2 cups water
  • 1 tsp cinnamon (optional – but doesn’t cinnamon always make things better..?)


  1. Preheat oven to 375 degrees F.
  2. Add all ingredients to a blender and puree mostly smooth and no large pieces of nuts remain.
  3. Fill 12 muffin liners to the brim.
  4. Bake for 22 minutes or until a toothpick comes out mostly clean.
  5. Remove muffins to a cooling rack for at least 10 minutes before enjoying with a slice of vegan butter or simply plain.
