It’s indisputable: Everyone loves tacos! I honestly wish every day was Taco Tuesday.

They’re so versatile, easy to make, and delicious. Stuff a tortilla full of your favorite veggies or vegan meats, and you’ve got yourself the perfect meal.

One of my favorite recipes consists of smokey spiced seitan with a decadent avocado, bean, and corn topping.

1/2 cup corn

1/2 cup black beans

1 cup cherry tomatoes

1/2 onion, chopped

1/4 cup green onion, chopped

Handful of cilantro, chopped

2 avocados

1 lime, juiced

2tbsp olive oil

1 package of vegan beef or chicken

1/2 packet of taco seasoning

Corn tortillas


Combine corn, black beans, tomatoes, onion, green onion, cilantro, avocado, and lime juice in a large bowl until evenly combined.

Add oil to a medium skillet over medium-high heat. Cook the vegan meat until warmed through. Half way through add the taco seasoning.

Meanwhile, warm corn tortillas in microwave or on a nonstick skillet.

To plate, lay out the tortilla and add the vegan meat and avocado mixture. Voila!
