Spring rolls are great for summer and entertaining guests. Looking for something to bring to a potluck? Do you have a dinner party in the plans? Trying to impress a date? Or do you simply want something beautiful, healthy and delicious to eat? You must make these spring rolls!

Julienne your favorite veggies (and keep in mind the colors) – I like carrots, radishes, red cabbage, yellow peppers, a little basil and cilantro, and you can even add edible flowers to make them even prettier! Find any rice paper wrapper at your store, like this one, and follow the instructions on the package to tightly wrap up your veggies. Check out this 30 second video for a tip! (It took me a few times – and some frustration – to get it right so don’t give up too quickly!)

Then, create the peanut sauce that makes this dish addicting!

INGREDIENTS

1/2 cup peanut butter (you can use salted or add salt)

1 1/2 Tbsp soy sauce or tamari

2-3 Tbsp brown sugar

1/2 lime, juiced

1/2 tsp chili garlic sauce (you can find this in the Asian section at the supermarket)

1/2 tsp fresh grated ginger

enough hot water to thin out the sauce

 

Mix everything together and it’s time to taste test!
