Peas In A Pesto? That’s Right!

Have you ever had a Pea Pesto Pasta? You gotta try it! It’s super flavorful and the peas provide a good source of protein and fiber!
- 3 cups frozen peas
- 1 1/2 cups fresh basil leaves
- 3/4 cups chopped walnuts
- 1/3 cup olive oil
- 3 Tbsp lemon juice
- 4-5 garlic cloves
- Place all the ingredients in a blender or food processor and pulse until well-mixed.
- Season with salt and pepper and warm on stove until your pasta is cooked.
- Mix into your pasta and then top with a few fresh peas and your favorite vegan parmesan, like Go Veggie or Follow Your Heart 🙂
