What’s better than some warm, sweet french toast on a Sunday morning? Not much… I have to admit I’m a little lazy in the kitchen so I wanted to create an easy and delicious recipe I can whip up super quick.

Thick, day old vegan bread is best for making french toast so it doesn’t fall apart, but if your bread is too fresh just let it sit out of the package for as long as you can. Using chia seeds in the batter helps create that eggy texture you’re looking for, and the cinnamon helps pump up the flavor.

This recipe is super easy to customize as well. Top with your favorite fruit, nuts, coconut flakes, vegan whipped cream…whatever your heart and taste buds desire! I even sometimes smear some Tofutti cream cheese between the bread layers before drizzling on the maple syrup. Is your mouth watering yet??



4 slices (or more) Thick, day old vegan bread

1 cup unsweetened vegan milk

1 tbsp ground chia seeds

½ tsp ground cinnamon

½ tsp vanilla extract

½ tsp maple syrup (plus more for on top)

Vegan butter or oil for cooking


Cut thick slices of bread and let sit out to dry a bit. In a deep pan or dish, combine vegan milk, chia seeds, cinnamon, vanilla, and maple syrup and mix well. Let mixture refrigerate for at least 10 min to thicken. (If you only have whole chia seeds, you can use a coffee grinder to grind them up. Ground chia seeds coat the bread a little better).

Put a small amount of oil or vegan butter in a skillet on medium-high heat. Dip the bread in the refrigerated mixture and coat both sides. Shake off any excess and gently place into the hot skillet.

Cook both sides of the bread until you see a nice golden brown color.

Serve with strawberries or your favorite fruit, maple syrup, and vegan whipped cream.
