RECIPE: Easy & Delicious Vegan Tacos
Taco Tuesday may just be my favorite day of the week. What’s not to love about tacos?! From the versatile fillings to the spicy sauces, even the types of tortillas – you can truly make a taco your own.
And why wait for Tuesday? Tacos can be enjoyed any day, hour, or second of the week! Here is one of my favorite recipes:
1/2 can corn
1/2 can black beans, drained
1/2 cup cherry tomatoes, halved
1/2 onion, diced
1 green onion, diced
2 avocados, peeled and chopped
Juice of 1 lime
2 tbsp olive oil
2 cups your favorite vegan meat substitute
1/2 packet of vegan taco seasoning
In a large bowl, gently mix the corn, beans, tomatoes, onion, green onion, parsley, avocado, and lime juice. Set aside.
In a large skillet over medium heat, add 2 tbsp olive oil. Then add the vegan meat substitute and taco seasoning. Cook 5-6 minutes.
Meanwhile, warm the tortillas over a low heat.
Then plate the tortillas and top with the vegan meat and the corn, bean, and tomato mixture. Enjoy!
