RECIPE: Vegan Bacon Ranch Chili Cheese Fries
That’s right! Vegans like to indulge, too! Fancy up those french fries with this incredibly satisfying recipe that includes a robust chili with vegan cheddar cheese and crispy veggie bacon. If you like it spicy, top with fresh thin slices of jalepeños and vegan ranch for that perfect bite.
Ingredients:
1 minced garlic clove
1/4 onion
1/2 can red kidney beans
1 small tomato, diced
1 tbsp tomato paste
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp sugar
1/4 tsp salt
pinch of black pepper
1/4 cup water
1/4-1/3 cup grated vegan cheddar cheese (depends on how ya like it)
2 servings of french fries (i.e. about a small basket full)
2 or 3 strips of vegan bacon
1/2 jalapeño, sliced thinly (optional)
chopped green onions (1-2 stalks worth)
~1/4 cup vegan ranch for drizzle or dipping
Instructions:
Fry or bake a couple handfuls of fries and sprinkle with salt. (Follow instructions on package). Set aside.
In a lightly oiled pan on medium heat, add the garlic and onions and cook till slightly browned. Add the kidney beans, tomato, tomato paste, cumin, chili powder, paprika, sugar, salt, pepper and water and stir together in pan. Cover and let cook for a few minutes to let the beans soften and flavors meld. Use a spatula to bring chili to center of pan and put the grated cheese on top. Recover until the cheese has melted. Use a spatula to scoop the chili up and place it right on top of your fries.
Cook 2 or 3 strips of vegan bacon (follow instructions on package) and lay on top of chili cheese fries. You can also let the bacon cool and crumble on top. Adorn with green onions and jalapeños, and drizzle with vegan ranch or put in small container for your dipping pleasure.
