Blueberry Muffins

It’s funny how some recipes make you remember of a place, a friend, a day. When I was creating this recipe I kept thinking of my good friend Tania, as she is a huge fan of blueberry muffins. The whole house was filled with a sweet smell that made me smile. These muffins are soft, light, sweet and go extremely well with a cup of coffee or tea. It ‘s easy and quick to prepare!  I used blueberries but you can use any kind of berries you like. Give it a go, I can guarantee you’ll love ’em!

Preparation Time: 30 – 40 Minutes


  • 2 cups of flour
  • 1 tbsp baking powder
  • 1 cup of light brown sugar
  • 1/2 tsp salt
  • 1 cups of almond milk
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 5-6 oz blueberries


In a large bowl stir together the flour, baking powder, salt and light brown sugar.
Add the almond milk, oil, vanilla and the blueberries.

Spoon the mixture evenly into a greased muffin tin and bake it for 16 minutes at 392F or until a fork comes out clean.
