This is basically heaven in a cup. It tastes like dessert but it’s healthy enough to be called breakfast.

Ingredients

  • Any kind of dairy-free granola. I usually go for one with flaxseeds (for the omega-3’s and fiber) and cinnamon (for its many benefits including its anti-inflammatory properties, for heart health, brain function, antioxidants, etc). Plus cinnamon tastes amazing and should go on everything imo.

  • 1 can coconut cream

  • 1 tsp vanilla extract

  • 4 Tbsp powdered sugar (if you prefer it sweet)

  • handful of strawberries

Instructions

1. Put a spoonful of granola at the bottom of a clear cup or mug.

2. For the “cream” layer combine 1 can of coconut cream with 1 tsp of vanilla extract. You can add up to 4 Tbsp of powdered sugar if you want extra sweetness.

3. For the strawberry layer simply smash some up and spoon it into your cup. Add a bit of sugar if needed, but I find fresh, ripe strawberries to be sweet enough.

4. Add another layer of cream and top with more strawberries!
