If you’re more of a pancake person, these waffles may just change your mind. Buying my own waffle maker has definitely paid off.


1 cup all-purpose/wheat flour

1 cup unsweetened soy milk

2 tbsp coconut or veg oil

1 tsp baking powder

1/2 tsp vanilla extract

Pinch of salt and cinnamon


1. Mix the dry ingredients first and then add in the wet ingredients. Whisk together and pour over greased waffle iron. They’ll come out fluffy on the inside and crispy on the outside.
