Boneless vegan chicken tenders

Crunchy on the outside and tender on the inside, these plant-based chicken tenders are ideal as an appetizer, snack, or paired with a dipping sauce for a full meal.

  • .25 cups cornstarch
  • 1.0 tsp. ground cumin
  • 2.0 tbsp. soy sauce
  • 1.0 tbsp. wheat flour
  • .5 cups water
  • 1.0 tsp. salt
  • 10 oz. vegan chicken, cut into medium strips
  • 2.0 cups unsweetened, shredded coconut (finely chopped or pulsed in a food processor)
  • oil (for frying)

Preparation

  1. Prepare the batter: In a bowl, combine the cornstarch, cumin, soy sauce, wheat flour, water, and salt. Whisk until smooth and thick.
  2. Coat the pieces: Dip each piece of vegan chicken into the batter, then coat thoroughly with coconut. Press lightly so the coconut sticks well.
  3. Fry: Heat oil in a skillet over medium heat. Fry the coated pieces until golden and crisp on all sides. Remove and drain on paper towels.
  4. Serve: Enjoy hot with your favorite dip.
