- 2 large onions
- 3 tbsp. cornstarch (for coating)
- 0.33 cups cornstarch (for batter)
- 0.75 cups all-purpose flour
- 1 tbsp. turmeric
- 1 tbsp. vegetable bouillon powder
- 0.5 tbsp. salt
- 1 tbsp. fine herbs
- 1 tsp. granulated pepper
- 0.5 cups sparkling water
- 1 cups oil, for frying
Preparation
- Prep the onions: Slice the onions into ½-inch rings and separate the layers.
- Coat: Add the onion rings to a bowl with 3 tbsp. cornstarch and toss until evenly coated.
- Make the batter: In a bowl, whisk together the ⅓ cup cornstarch, flour, turmeric, bouillon powder, salt, fine herbs, and pepper. Gradually whisk in the sparkling water until the batter is thick, like pancake batter.
- Dip: Working in small batches (about 4 rings at a time), dip the onion rings into the batter until fully coated.
- Fry: Heat 1 cup of oil in a small pot over medium-high heat. When hot, fry the onion rings until golden brown, flipping once. Repeat with remaining rings.
- Drain: Transfer to paper towels to drain.
- Serve: Serve hot with your favorite vegan sauce or dip.
Tips
For the crispiest rings, let the battered onions rest for 5 minutes before frying, then serve right away.
