Peanut butter brownies
Chocolate and peanut butter—the ultimate dessert duo—combine in these rich, marbled, plant-based brownies. Mix, melt, pour, and bake to enjoy a perfectly moist, fudgy treat that the whole neighborhood will be raving about.
Ingredients
(SERVINGS: 8-12)
- 1 ⅔ cups self-raising flour
- 1 cup granulated sugar
- ½ cup cocoa powder
- Pinch of salt
- ⅓ cup + 1 tbsp. applesauce
- 7 tbsp. vegetable or coconut oil
- ⅔ cup plant milk
- ½ tsp. vanilla extract
- 3 tbsp. sparkling water
- 7 oz. vegan dark chocolate
- 3 tbsp. peanut butter
Preparation
- Prep: Preheat the oven to 350°F.
- Mix: In a large bowl, combine the flour, sugar, cocoa powder, and salt. In a separate bowl, mix together the applesauce, oil, plant-based milk, vanilla extract, and sparkling water.
- Melt and cool: Melt the dark chocolate in a saucepan over a low heat. Allow it to cool slightly before stirring into the bowl with the dry ingredients. Add in the mixed liquid ingredients, a small amount at a time, and stir well.
- Pour onto a baking tray: Line a baking tray with greaseproof paper and pour the mixture in, spreading it out evenly. Drizzle the peanut butter on top. Swirl a fork through it so it mixes with the top layer of the cake batter to form a marble effect.
- Bake and cool: Bake for 25 minutes, or until the edges are cooked through but the center is still slightly gooey. It will continue to set as they cool–the end result should be moist and fudgy!
