Apple salad

Fresh sweetness meets tropical tang with this apple salad, prepared with pineapple, walnuts, and agave. The secret ingredient–blended tofu–forms a creamy dressing that ties it together. Serve it chilled, then enjoy your perfectly balanced creation! 

Ingredients

(SERVINGS: 4)

 

  • 5 yellow apples, diced
  • Salt (for soaking the apples)
  • 3 cups pineapple in syrup (divided)
  • 1 block soft silken tofu
  • ½ cup chopped walnuts
  • Agave (optional, for extra sweetness)

Preparation

 

  1. Soak: In a large bowl, soak the diced apples in salted water for 10 minutes. 
  2. Blend: Blend the silken tofu with the pineapple syrup and 1 cup of pineapple until it becomes a creamy liquid. 
  3. Mix and sweeten: Mix the apples, remaining drained pineapple, and walnuts with the cream. You can sweeten further by adding agave. 
  4. Serve: Refrigerate for one hour and serve.
