Avocado smash toast
Bright, creamy, and savory, this avocado smash toast is perfect for your lazy Saturday morning. Simply pop the peppers in the oven, smash your avocado, and kick off the weekend with a bite of something savory!
Ingredients

- ½ red bell pepper
- Olive oil, for drizzling
- Pinch of salt
- 1 avocado
- 1 tsp. paprika
- Chilli flakes
- 1 clove garlic, minced
- Breakfast muffin or favorite bread, toasted
- Cherry tomatoes, halved
- Plant-based feta
Preparation
- Prepare: Preheat the oven to 390° F. Cover a baking tray with parchment paper.
- Season: Put the red pepper on the baking tray. Drizzle olive oil and season with salt.
- Roast: Roast red pepper for 15-20 minutes until charred. Allow to cool and slice into strips, then set aside.
- Mash and spread: Mash avocado with a fork and mix in paprika and chili flakes. Drizzle olive oil to your desired consistency, then spread generously on a toasted muffin.
- Serve: Top with crumbled, plant-based feta and halved cherry tomatoes. Serve roasted red peppers on the side.
