Baja style tacos

- 14.0 oz  firm tofu, drained and pressed
- 1.0 cups soy sauce
- 1.0 cups flour
- .5 bottle light vegan beer
- .25 tsp. baking powder
- .5 tsp. paprika
- salt and pepper, to taste
- .5 head purple cabbage, shredded
- cherry tomatoes, halved
- 12.0 tortillas
- avocado, sliced
Preparation
- Marinate: Cut the tofu into thick strips and place them in a medium bowl. Pour the soy sauce over the strips, toss to coat evenly, and let them marinate for 30 minutes.
- Make the paste: In a medium bowl, mix the flour, beer, baking powder, paprika, garlic powder, onion powder, and pepper until you have a paste.
- Prepare the pan: Heat a pan over medium heat and add enough oil for frying. Line a plate with paper towels and set it aside.
- Fry: Dip the tofu strips into the flour mixture, coating them evenly. Place them in the hot oil and fry until golden brown, turning to cook evenly. Remove from the oil and set on the prepared paper towels.
- Assemble: Chop the cabbage and cherry tomatoes, heat the tortillas, and assemble your tacos. Enjoy!
