Baked Seitan

- 3.0 large potatoes
- 1.0 white onion
- 9.0 oz. mushrooms
- 10.5 oz. seitan (homemade or store-bought)
- .5 cups white wine
- .5 cups water
- 2.0 tbsp. olive oil
- 4.0 bay leaves
- .25 tsp. dried parsley
- .25 tsp. dried thyme
- .25 tsp. dried rosemary
- pinch of garlic powder
- pinch of salt
Preparation
- Preheat the oven: Set to 410°F (top and bottom heat if available).
- Prepare the potatoes: Peel, wash, and cut into medium-sized chunks. Place them in a baking dish or tray.
- Add the onion: Peel, cut into quarters, and place in the dish.
- Add the mushrooms: Wash, cut into medium pieces, and add them.
- Add the seitan: Dice and place in the dish. Mix together lightly.
- Season the dish: Drizzle with the white wine and water, then pour on the olive oil. Sprinkle with herbs, garlic powder, and salt.
- Bake: Place in the oven for about 40 minutes, or until the potatoes are tender when pierced with a fork.
- Serve: Remove from the oven and serve hot.
