Baked Seitan

This oven-baked seitan is golden and hearty, offering a meaty texture packed with plant-based protein. Made from wheat and celebrated worldwide, it’s juicy, versatile, and naturally free of saturated fat.

Ingredients

  • 3.0 large potatoes
  • 1.0 white onion
  • 9.0 oz. mushrooms
  • 10.5 oz. seitan (homemade or store-bought)
  • .5 cups white wine
  • .5 cups water
  • 2.0 tbsp. olive oil
  • 4.0 bay leaves
  • .25 tsp. dried parsley
  • .25 tsp. dried thyme
  • .25 tsp. dried rosemary
  • pinch of garlic powder
  • pinch of salt

Preparation

 

  1. Preheat the oven: Set to 410°F (top and bottom heat if available).
  2. Prepare the potatoes: Peel, wash, and cut into medium-sized chunks. Place them in a baking dish or tray.
  3. Add the onion: Peel, cut into quarters, and place in the dish.
  4. Add the mushrooms: Wash, cut into medium pieces, and add them.
  5. Add the seitan: Dice and place in the dish. Mix together lightly.
  6. Season the dish: Drizzle with the white wine and water, then pour on the olive oil. Sprinkle with herbs, garlic powder, and salt.
  7. Bake: Place in the oven for about 40 minutes, or until the potatoes are tender when pierced with a fork.
  8. Serve: Remove from the oven and serve hot.
