Banana Bread

This banana bread is soft, moist, and naturally sweetened with ripe bananas and brown sugar. A hint of peanut butter adds richness, while dairy-free chocolate chips bring a touch of indulgence!

Ingredients

 

  • 3 ripe bananas
  • 1 tbsp. peanut butter
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • ½ tbsp. vanilla extract
  • 1 ½ cups wheat flour
  • 1 ½ tbsp. baking powder
  • 1 pinch of salt
  • 2 tbsp. sunflower seeds
  • 2 tbsp. dried cranberries or milk-free chocolate chips

Preparation

 

  1. Prep: Preheat the oven to 350º F.
  2. Mash: Mash the bananas until pureed, then add the peanut butter and mix together.
  3. Mix: In a bowl, mix the sugar, oil, and mashed banana until there are no clumps.
  4. Sift & Combine: Sift the flour and baking powder, then add them to the mixture.
  5. Pour & Top: Pour the batter into a baking dish and sprinkle with sunflower seeds and cranberries or chocolate chips.
  6. Bake: Bake for 40 to 50 minutes or until a toothpick inserted into the bread comes out clean.
