Banana pancakes

What’s a Saturday morning without pancakes? Sweeten up your weekend with bananas, applesauce, cinnamon, and berries–a perfect blend of indulgence and nutrients. Simply mix, mash, stack, and enjoy! 

Ingredients

  • 0.33 cups mashed bananas (about 2 medium-sized ripe bananas)
  • 1.0 cups all-purpose flour
  • 1.0 tbsp. baking powder
  • .5 tsp. cinnamon
  • .25 tsp. salt
  • .25 cups applesauce
  • .75 cups plant-based milk
  • 1.0 tbsp. plant-based butter (or plant-based margarine)
  • coconut oil (for cooking)
  • maple syrup (for serving)
  • berries (for serving)

Preparation

 

  1. Combine: In a mixing bowl, combine flour, baking powder, cinnamon, and salt.
  2. Mash: Using another mixing bowl, mash the ripe bananas with a fork.
  3. Stir: Stir in apple sauce and plant-based milk until blended. Add in the flour, baking powder, cinnamon, and salt mixture. Stir to combine. Some lumps are okay. 
  4. Heat: Over high heat, melt your plant-based butter (or plant-based margarine) in a small frying pan.
  5. Assemble: Make two pancakes at a time by adding ⅓ cup of pancake batter to the frying pan, and cook for 3 minutes or until golden brown on each side. Serve with berries and maple syrup!
