Banana pancakes

- 0.33 cups mashed bananas (about 2 medium-sized ripe bananas)
- 1.0 cups all-purpose flour
- 1.0 tbsp. baking powder
- .5 tsp. cinnamon
- .25 tsp. salt
- .25 cups applesauce
- .75 cups plant-based milk
- 1.0 tbsp. plant-based butter (or plant-based margarine)
- coconut oil (for cooking)
- maple syrup (for serving)
- berries (for serving)
Preparation
- Combine: In a mixing bowl, combine flour, baking powder, cinnamon, and salt.
- Mash: Using another mixing bowl, mash the ripe bananas with a fork.
- Stir: Stir in apple sauce and plant-based milk until blended. Add in the flour, baking powder, cinnamon, and salt mixture. Stir to combine. Some lumps are okay.
- Heat: Over high heat, melt your plant-based butter (or plant-based margarine) in a small frying pan.
- Assemble: Make two pancakes at a time by adding ⅓ cup of pancake batter to the frying pan, and cook for 3 minutes or until golden brown on each side. Serve with berries and maple syrup!
