Buffalo cauliflower bites

Spicy, crispy, and 100% plant-based, these Buffalo cauliflower bites are a fiery favorite made from oven-roasted battered cauliflower coated in zesty buffalo sauce. Serve them with vegan ranch for the ultimate game-day or snack-time hit.

Ingredients

  • 6 cups cauliflower cut into bite-size pieces

For the batter

  • .5 cups flour (or substitute with rice or oat flour)
  • .5 cups plant-based milk of your choice (or substitute with water)
  • 1.0 tsp. garlic powder
  • 1.0 tsp. onion powder
  • 1.0 tsp. paprika (more if you like heat)
  • .5 tsp. cumin
  • salt & pepper to taste

For the buffalo sauce

  • .5 cups buffalo hot sauce (or hot sauce of your choice)
  • 2 tbsp. vegan butter, melted
  • .5 tsp. paprika
  • 1.0 tsp. garlic powder
  • .5 tsp. salt
  • .5 tsp. ground black pepper

For the vegan ranch

  • .5 cups vegan mayo
  • 1.0 tbsp. plant-based milk of your choice
  • .5 tsp. apple cider vinegar
  • 2 garlic cloves, minced
  • .5 tsp. onion powder
  • 2 tsp. dried dill
  • .5 tsp. dried parsley
  • salt & pepper to taste

Preparation

 

  1. Preheat the oven to 450º F (230º C). Prepare a baking sheet with oil or parchment paper to prevent sticking.
  2. Cut the head of cauliflower into bite-size pieces and place into a bowl.
  3. In a separate bowl, mix together the batter ingredients until thoroughly combined. Add salt and pepper to taste. The batter should resemble pancake batter. If the batter is too thick, add more plant-based milk, one tablespoon at a time. 
  4. Add the cauliflower to the batter and toss to coat, making sure each piece is fully coated.
  5. Spread the cauliflower evenly onto the prepared baking sheet.
  6. Bake in the preheated oven for 25 minutes or until golden brown, flipping halfway through.
  7. While the cauliflower is baking, heat a small saucepan over medium-low heat. Melt the butter (or coconut oil), then add the buffalo sauce and spices. Stir until well combined. 
  8. When the cauliflower comes out of the oven, pour the sauce over the top of the cauliflower and return to the oven for 15-20 minutes.
  9. Serve with celery, carrots, and vegan ranch.

 

instructions for ranch dipping sauce (optional):

  1. In a medium bowl, combine all of the sauce ingredients.
  2. Stir until well combined. If too thick, add another splash of plant-based milk.
  3. Refrigerate for a few hours before serving to allow the flavors to come through. Or, enjoy it right away!
