Carrot & nut bread

- 4.0 cups flour
- 1.0 packet dry instant yeas
- 1.0 tbsp. apple cider vinegar
- 1.0 tsp. salt
- 1.0 pinch of nutmeg
- 1.5 cups room temperature water
- 1.0 large carrot, grated
- 1.0 cups walnuts, roughly chopped
Preparation
- Prepare: Preheat your oven to 375°F
- Mix: In a large bowl, mix the flour, yeast, apple cider vinegar, salt and nutmeg.
- Form the dough: Stir in the lukewarm water to form a homogeneous dough. Cover and leave to rest for 2 hours in a warm place.
- Grate and chop: Grate the carrots, roughly chop the walnuts, and knead into the dough.
- Bake and serve: Line a loaf tin with baking paper and add the dough. Bake for about 50 to 60 minutes in a preheated oven. Let rest in the loaf pan for 15 minutes before slicing.
Tips
The carrot nut bread tastes best when warm. Try it with peanut butter or a vegan chocolate spread!
