Chickpea omelet
Crispy, savory, and protein-packed, this chickpea omelette is perfect for stuffing with your favorite vegetables. Golden on the outside and cheesy on the inside, it’s best enjoyed with a drizzle of hot sauce and a fresh cup of coffee.
Ingredients
- .75 cups chickpea flour
- 1.0 tbsp. nutritional yeast
- 1.0 tbsp. ground turmeric
- .25 tsp. Himalayan salt
- Black pepper, to taste
- 0.333 cup water
- 1.0 tsp. olive oil
- A handful of preferred vegetables (e.g., onion, peppers, mushrooms), diced
- Grated plant-based cheez
- A handful of spinach leaves
- Optional: Chili sauce or hot sauce
Preparation
- Mix: Combine the chickpea flour with the nutritional yeast, turmeric, and Himalayan salt. Mix in a pinch of table salt and black pepper to taste.
- Whisk and combine: Add ⅓ cup of water and whisk for a few seconds until a smooth batter forms. Then, add the vegetables.
- Fry: Heat the olive oil in a frying pan over medium heat. Pour batter and fry for a few minutes until the edges have crisped and the batter in the middle has firmed.
- Cook: Flip the omelet over and cook for 3-5 minutes. Once cooked through,
- Add cheez and flip: Add the grated plant-based cheez and spinach to the top, fold the omelet in half, and remove from the pan.
- Optional: Serve with chili sauce or hot sauce for a spicy kick!
Tips
Use a pinch or two of black salt to give your omelette an egg-like taste!
