Chickpea salad

  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 0.33 cup thinly sliced celery
  • 0.33 cup minced red onion
  • 2 tablespoons fresh lemon juice
  • 0.5 tablespoon stone-ground or Dijon mustard
  • 0.125 2–3 tablespoons chopped fresh dill
  • 0.33 cup chopped dill pickles
  • ⅓–½ cup vegan mayo (see tips for mayo-free options)
  • sea salt and black pepper, to taste

Sandwiches

  • bread
  • toppings of choice, such as sliced tomatoes, lettuce or spinach leaves, sprouts or microgreens, sliced radish, sliced dill pickle, or sliced olives

Preparation

  1. Mash the Chickpeas: In a large bowl, mash the chickpeas with a potato masher for about 2–3 minutes, until you have a chunky mixture. Most of the beans should be broken up, but some can remain whole. Alternatively, pulse the chickpeas in a food processor until evenly broken up but not smooth, then transfer them to the bowl.
  2. Mix the Salad: Add the celery, red onion, lemon juice, mustard, dill, dill pickles, and vegan mayo to the bowl and stir well to combine. Season with sea salt and black pepper to taste.
  3. Assemble the Sandwiches: Spread the chickpea salad on a slice of bread, lightly toasted if you like, to help it hold up to the moisture. Add your toppings of choice, top with another slice of bread, and enjoy!

Tips

Keep some texture: Mash the chickpeas until most are broken up, but don’t worry if some stay whole. The added texture makes the filling more satisfying.

Make it ahead: The flavors meld more deeply the next day, so make the chickpea salad in advance if you have time.

Toast the bread: Lightly toasting the bread helps protect your sandwich from getting soggy.

Try a milder onion: If red onion is too strong for you, use sliced green onions, white and light green parts only, or swap in some chopped fresh chives.

Go mayo-free: Substitute an equal amount of plain, unsweetened vegan yogurt or hummus. Or use 2–3 tablespoons of tahini plus 1–2 teaspoons dill pickle juice or lemon juice.

Storage: Store leftover chickpea salad in an airtight container in the refrigerator for up to 3 to 4 days. Don’t freeze it, since it will lose its structure and turn watery once thawed.
