Coconut pudding with mango

Made with rich coconut milk, hydrating chia seeds, and naturally sweet mango, this refreshing recipe comes together in just 20 minutes.

Ingredients

(Servings: 2)

 

  • 2 cups coconut milk
  • 2 tbsp. dehydrated coconut
  • 4 tbsp. chia seeds
  • 2 mangoes

Preparation

 

  1. Pour: 1 cup of coconut milk into each of two glasses.
  2. Mix: Add 1 tbsp. of dehydrated coconut and 2 tbsp. of chia seeds to each glass. Stir well.
  3. Refrigerate: Chill for 20 minutes until the chia seeds create a gel-like consistency.
  4. Top: Finish with mango pulp and enjoy!
