Ingredients
(SERVINGS: 5)
- 1 cup unsalted cashews
- 2 tbsp. lemon juice
- 2 tbsp. nutritional yeast
- 2 tsp. white miso paste
- 1 garlic clove
- ¼ tsp. salt
- ¾ cups nuts of your choice, chopped (try almonds or walnuts)
Preparation
- In a medium container, soak the cashews in water for at least four hours (overnight is best).*
- Drain the nuts, then add them to a high-powered blender with lemon juice, nutritional yeast, miso paste, garlic, and salt. Blend until uniform.
- Line a small bowl with plastic wrap and add the cheese mixture. Using the ends of the plastic wrap, shape the mixture into a cheese ball. Leave it to rest in the freezer for an hour.
- After an hour, remove the plastic wrap and carefully press the chopped nuts into the ball.
- Serve with crackers or as part of a plant-based charcuterie board.
Tips
Don’t have time to soak the cashews overnight? Try pouring boiling water into a bowl with the nuts and allow to soak for 2 hours.
Try adding paprika, chili powder or fresh herbs! You can also swap the chopped nuts for cranberries, chives or fresh pepper.
