Creamy green bean casserole
A creamy casserole made with tender green beans and topped with crispy fried onions? Yes, please. Your favorite comfort food can be made just as rich and savory as you remember… without animal products.
We made ours with a quick, homemade cream of mushroom soup and browned our crispy onions in the oven until extra crunchy.
Ingredients
- 3 cans of green beans, drained (or 4 lbs. of fresh green beans)
- 2 cups vegetable broth or water
- 1 ½ cups french fried onion
- Salt and pepper to taste
For the dairy free cream of mushroom soup
- 1 8-oz. container of mushrooms, chopped
- 3 Tbsp. plant-based butter or margarine
- 1 Tbsp. olive oil
- 1 Tbsp. garlic, minced
- 1 Tbsp. Worcestershire sauce (optional)
- ¾ cup vegetable broth
- 1 cup unsweetened plant milk or vegan heavy cream
- 1 ½ Tbsp. flour
- 1 Tbsp. water
- 1 tsp. parsley
- Salt and pepper to taste
Preparation
- Preheat your oven to 350ºF.
- If using canned beans, drain and set aside. If using fresh green beans, prep by cutting off the ends and slice into halves. In a simmer pot, bring your vegetable broth or water to a boil. Add your green beans to the pot, reduce to medium-low heat, and simmer for 5-7 minutes or until fork tender. Drain and set aside.
- In a large saucepan, melt your plant-based butter or margarine over medium-low heat. Stir in olive oil and garlic, then heat. Add chopped mushrooms. Stir constantly until the mushrooms begin to sweat.
- Add Worcestershire sauce and vegetable broth, stirring until warmed through. Next, mix in unsweetened plant milk or vegan heavy cream, and continue to stir until fully heated.
- Whisk in the flour. Turn the heat up to medium and allow to thicken, stirring occasionally. Stir in parsley and season with salt and pepper to taste. Remove from heat.
- In the saucepan, mix homemade cream of mushroom soup, green beans, ½ cup fried onions, and salt and pepper to taste.
- Pour into a casserole dish and bake for 30 minutes. Once done, top with remaining fried onions.
- Optional: return to the oven until onions are browned and crispy.
