Ingredients

(MAKES: 8)

  • 2 cups flour
  • 2 tsp. granulated sugar
  • 1 cup plant-based milk
  • ¾ cup unflavored sparkling water
  • Vegetable oil, for frying
  • Optional: Plant-based chocolate sauce, berries, or nuts

Preparation

  1. Combine: Mix the flour and sugar in a large bowl.
  2. Whisk: Slowly add the plant-based milk and sparkling water, stirring to combine. Whisk the mixture until you have a smooth batter. Leave to rest for 10 minutes.
  3. Oil the pan: Heat a frying pan on medium-high heat, then add 1 tsp. of vegetable oil. Using a cooking brush or paper towel, spread the oil out all over the pan.
  4. Pour and cook: Once hot, use a ladle to pour a thin layer of the batter into the pan in a circular shape. Depending on the size of your frying pan and how big you’d like the crêpes to be, you can cook these in batches or one at a time.
  5. Fry and serve: Fry for around 2 minutes on each side, or until golden brown and crispy at the edges. Serve with your favourite toppings, such as plant-based chocolate sauce, berries, or nuts.
