Fettuccine alfredo
Fettuccine Alfredo is a beloved Italian classic that has won hearts around the world. This dairy-free version–made with garlic, cauliflower, and nutritional yeast–combines creamy elegance with wholesome ingredients. It’s perfect for date nights, family dinners, or simply treating yourself to something special.
Ingredients
- Olive oil
- 1.0 garlic clove, minced
- 1.0 head of cauliflower, cut into medium pieces
- 2.0 cups almond milk
- Salt and pepper, to taste
- 2.0 tbsp. nutritional yeast
- 1.0 tsp. lemon juice
- 1.0 package of cooked Fettuccine pasta
- bread, for serving
Preparation
- Sauté and boil: Heat a small amount of olive oil in a pan. Slice the garlic and sauté it until fragrant. Cut the cauliflower into medium pieces and add them to the pan with the garlic. Stir and cook for about 10 minutes, then pour in the almond milk and bring to a boil. Season with salt and pepper.
- Blend and serve: Transfer the mixture to a blender and blend until smooth, adding the nutritional yeast and lemon juice. Toss the sauce with the cooked fettuccine and serve with bread.
