Frosted Cinnamon Buns
These vegan cinnamon buns are soft, fluffy, and swirled with a sweet cinnamon filling that’s impossible to resist. Ingredients
(SERVINGS: Makes 8 buns)
For the bun:
- 4 cups flour
- 1 cup plant milk
- ⅓ cup plant-based butter or margarine, room temperature
- ¼ cup brown sugar, packed
- 1 packet of dry instant yeast (about 2 ¼ tsp.)
- 1 pinch of salt
For the filling:
- ¼ cup brown sugar, packed
- 1 tbsp. cinnamon
- 3 tbsp. plant-based butter or margarine
For the icing:
- 1 ½ cups powdered sugar
- 3 tbsp. water
Preparation
- Preheat your oven to 400ºF. Line a baking tray with parchment paper or lightly grease.
- With a fine mesh strainer, sift the flour into a large bowl. Set aside.
- In a medium saucepan, heat the plant milk until lukewarm. Dissolve the yeast into it.
- In the flour bowl, stir in the sugar, salt and margarine. Slowly add the plant milk and knead into a dough with your hands. Cover and leave to rise in a warm place for 45 minutes.
- While the dough rises, make the filling. Heat the margarine, cinnamon and sugar in a pan until the sugar has dissolved. Allow to slightly cool.
- On a floured work surface, roll out the dough o a thickness of about ½ inch.
- Spread the slightly-cooled mixture onto the dough. Roll up from the long side and cut into slices about an inch thick.
- Place side-by-side on a greased or lined baking tray and leave to rise for another 15 minutes.
- Bake the cinnamon buns in the preheated oven for about 10 minutes or until lightly golden. Take them out of the oven and allow them to cool completely.
- Mix the powdered sugar and water, and pour over the cooled cinnamon buns.
