Gingerbread Men
These vegan gingerbread men are a festive holiday treat, filled with warm spices and just the right touch of sweetness. Made with plant-based ingredients, they bake up soft yet sturdy enough for decorating with your favorite icing and toppings. Perfect for sharing, gifting, or enjoying with a cozy cup of cocoa!
Ingredients
(SERVINGS: Makes 10 cookies)
For the cookies:
- 1 ½ cups flour
- 1 tsp. baking powder
- 2 tsp. gingerbread spice
- A few drops of vanilla extract
- 3 ½ tbsp. plant butter or margarine
- 1 tbsp. brown sugar
- ¼ cup agave syrup
- 2 tbsp. plant milk
For the icing:
- 1 ½ cup powdered sugar
- 2 tbsp. water or plant milk
Preparation
- Preheat oven to 350ºF. Lightly grease a baking sheet.
- Mix the flour, baking powder, salt and gingerbread spice. Beat the sugar and margarine until smooth, then gradually stir in the vanilla extract and agave syrup.
- Add the flour mixture and plant milk. Knead into a firm dough.
- On a floured work surface, roll out the dough until ¼ of an inch thick. Cut out gingerbread men, stars, or other shapes.
- Bake for about 10 minutes in the preheated oven. Remove from the oven and leave to fully cool.
- Mix the powdered sugar and water, pour into a piping bag with a nozzle, and decorate the gingerbread.
Tips
For thicker gingerbread men with chocolate icing: roll out the dough to ½-inch thick, and extend the baking time to 15 minutes. Coat the gingerbread with a mixture of ½ cup melted vegan dark chocolate and 1 tsp. rapeseed or sunflower oil.
