- 2.5 green beans, trimmed
- 1.0 tsp. baking soda
- 1.0 cups unsweetened plant-based cream (such as soy, oat, or cashew)
- 4 tbsp. chopped walnuts
- 4 tbsp. dried cranberries
Preparation
- Cook the green beans: Bring 4 cups (1 quart) of water to a boil. Cut the green beans into medium pieces. Add the baking soda to the boiling water, then reduce the heat and add the beans. Cook for 7 minutes.
- Cool and chill: Drain and let the beans cool completely. Refrigerate for at least 30 minutes.
- Assemble the salad: In a bowl, combine the chilled green beans with the plant-based cream, walnuts, and dried cranberries. Toss gently until coated.
- Serve: Enjoy chilled as a light snack or serve as a side dish.
