Instant no egg mix
Inspired by flavors from Mexico, this Instant No Egg Mix is a quick, plant-based alternative to scrambled eggs or omelets. Made from protein-rich chickpea and quinoa flours blended with turmeric and savory spices, it’s perfect for hearty, flavorful breakfasts—ready in minutes.

- 2 cups chickpea flour
- 2 cups quinoa flour
- 2 tbsp.  turmeric
- 1.0 tbsp. salt
- 1.0 tbsp. onion powder
- 1.0 tbsp. garlic powder
Preparation
- In a large bowl, add the chickpea flour, quinoa flour, turmeric, salt, onion powder and garlic powder. Mix all of the ingredients thoroughly.
- Empty the mixture into an airtight container and set aside.
- For each serving, add ¼ cup of the mix + ¼ cup of water to a deep plate. Beat very well, as if it was an egg.
- Add your favorite omelet ingredients, such as tomato, onion, green chilies, mushrooms, and spinach, to the mixture.
- Heat 1 tablespoon of oil in a preferably non-stick pan. Pour the mixture in, allowing it to cover the entire pan. After two minutes, turn it over. Without beating it, break it apart to form egg-like pieces. Then, cook until the moisture is gone.
- Serve while hot with the toppings of your choice.
