Instant no egg mix

Inspired by flavors from Mexico, this Instant No Egg Mix is a quick, plant-based alternative to scrambled eggs or omelets. Made from protein-rich chickpea and quinoa flours blended with turmeric and savory spices, it’s perfect for hearty, flavorful breakfasts—ready in minutes.

  • 2 cups chickpea flour
  • 2 cups quinoa flour
  • 2 tbsp.  turmeric
  • 1.0 tbsp. salt
  • 1.0 tbsp. onion powder
  • 1.0 tbsp. garlic powder

Preparation

 

  1. In a large bowl, add the chickpea flour, quinoa flour, turmeric, salt, onion powder and garlic powder. Mix all of the ingredients thoroughly. 
  2. Empty the mixture into an airtight container and set aside.
  3. For each serving, add ¼ cup of the mix + ¼ cup of water to a deep plate. Beat very well, as if it was an egg. 
  4. Add your favorite omelet ingredients, such as tomato, onion, green chilies, mushrooms, and spinach, to the mixture.
  5. Heat 1 tablespoon of oil in a preferably non-stick pan. Pour the mixture in, allowing it to cover the entire pan. After two minutes, turn it over. Without beating it, break it apart to form egg-like pieces. Then, cook until the moisture is gone. 
  6. Serve while hot with the toppings of your choice.
