Onion rings

These onion rings are crisp, golden, and made for sharing. They’re budget-friendly, easy to pull together, and perfect with any vegan dip you love.

Ingredients

  • 2 large onions
  • 3 tbsp. cornstarch (for coating)
  • 0.33 cups cornstarch (for batter)
  • 0.75 cups all-purpose flour
  • 1 tbsp. turmeric
  • 1 tbsp. vegetable bouillon powder
  • 0.5 tbsp. salt
  • 1 tbsp. fine herbs
  • 1 tsp. granulated pepper
  • 0.5 cups sparkling water
  • 1 cups oil, for frying

Preparation

 

  1. Prep the onions: Slice the onions into ½-inch rings and separate the layers.
  2. Coat: Add the onion rings to a bowl with 3 tbsp. cornstarch and toss until evenly coated.
  3. Make the batter: In a bowl, whisk together the ⅓ cup cornstarch, flour, turmeric, bouillon powder, salt, fine herbs, and pepper. Gradually whisk in the sparkling water until the batter is thick, like pancake batter.
  4. Dip: Working in small batches (about 4 rings at a time), dip the onion rings into the batter until fully coated.
  5. Fry: Heat 1 cup of oil in a small pot over medium-high heat. When hot, fry the onion rings until golden brown, flipping once. Repeat with remaining rings.
  6. Drain: Transfer to paper towels to drain.
  7. Serve: Serve hot with your favorite vegan sauce or dip.

For the crispiest rings, let the battered onions rest for 5 minutes before frying, then serve right away.
