Pear cake

Pears, nuts, and brown sugar meld perfectly together in this moist cake recipe–perfect for sharing or keeping all to yourself. The best part? It’s completely egg-free and dairy-free, crafted with everyday ingredients like plant milk and vegan butter.

 

Ingredients

 

  • ⅔ cup plant-based butter or margarine
  • ¼ tsp. vanilla extract
  • 1 pinch of salt
  • ½ cup + 2 tbsp. brown sugar
  • 2 cups flour
  • ½ cup finely ground nuts (e.g., almonds, walnuts, or hazelnuts)
  • 2 tsp. baking powder
  • ¾ cup + 1 tbsp. plant milk
  • 4 large pears, peeled and sliced

Preparation

 

  1. Prep: Preheat the oven to 350 °F.
  2. Combine: Beat the margarine, vanilla, salt, and sugar in a large bowl with a hand mixer until fluffy. Mix the flour, nuts, and baking powder and gradually add to the bowl with the milk. 
  3. Assemble and bake: Pour the dough into a greased and floured springform pan. Peel the pears, cut into slices, and spread over the cake. Bake for about 45 minutes.
