- 7.7 cups waxy potatoes (e.g., Yukon Gold, fingerlings)
- 8.0 tbsp. olive oil
- 1.0 garlic cloves, crushed
- 1.0 tsp. paprika
- salt and pepper, to taste
- 1.0 fresh herbs (e.g., parsley, rosemary), finely chopped
Preparation
- Prep: Preheat the oven to 350ºF.
- Cut the potatoes: Slice the potatoes thinly, stopping just before cutting all the way through to keep the base intact.
- Mix the seasoning: In a small bowl, combine the olive oil, crushed garlic, paprika, salt, and pepper.
- Brush the potatoes: Arrange the sliced potatoes in an ovenproof dish. Generously brush each potato with the seasoning mixture, ensuring the oil gets between the slices.
- Bake: Place the dish in the preheated oven and bake for about 40 minutes, or until the potatoes are golden and tender.
