Potato wedges

Ingredients

  • 7.7 cups waxy potatoes (e.g., Yukon Gold, fingerlings)
  • 8.0 tbsp. olive oil
  • 1.0 garlic cloves, crushed
  • 1.0 tsp. paprika
  • salt and pepper, to taste
  • 1.0 fresh herbs (e.g., parsley, rosemary), finely chopped

Preparation

 

  1. Prep: Preheat the oven to 350ºF. 
  2. Cut the potatoes: Slice the potatoes thinly, stopping just before cutting all the way through to keep the base intact.
  3. Mix the seasoning: In a small bowl, combine the olive oil, crushed garlic, paprika, salt, and pepper.
  4. Brush the potatoes: Arrange the sliced potatoes in an ovenproof dish. Generously brush each potato with the seasoning mixture, ensuring the oil gets between the slices.
  5. Bake: Place the dish in the preheated oven and bake for about 40 minutes, or until the potatoes are golden and tender.
  6. Serve: Sprinkle with chopped fresh herbs and enjoy!

To make a vegan tzatziki sauce, combine 1 ¼ cups unsweetened plant-based yogurt with salt, olive oil, garlic and lemon juice.
