Raw Zucchini Lasagna

I love zucchini, it’s a great summertime vegetable! I’ve also been wanting to try a raw lasagna for awhile. This one is rich, refreshing and incredibly delicious. It takes almost no time to prepare so there is no excuse for not trying it. Enjoy!

Preparation Time: 30 – 40 Minutes


(serves 4)

  • 2 zucchini sliced
  • 10 oz tofu
  • 1/3 cup spinach
  • 3 tbsp tomato pesto
  • 10 tomatoes
  • 2 Tbsp sunflower seeds
  • Salt
  • Black pepper
  • Nutritional yeast to sprinkle


Slice the zucchini on a mandolin or any kind of slicer.

In a food processor mix 7 oz tofu with the tomato, salt and black pepper and set aside.

Mix the rest of the tofu with the tomato pesto and spinach.

On a small tray put one layer of zucchini and spread the first tofu mixture, put another layer of zucchini and spread the second tofu mixture. Keep doing it until you fill the tray and have no more tofu mixture or zucchini left.

Sprinkle the nutritional yeast on top and serve.
