Raw Zucchini Lasagna
I love zucchini, it’s a great summertime vegetable! I’ve also been wanting to try a raw lasagna for awhile. This one is rich, refreshing and incredibly delicious. It takes almost no time to prepare so there is no excuse for not trying it. Enjoy!Preparation Time: 30 – 40 Minutes
- 2 zucchini sliced
- 10 oz tofu
- 1/3 cup spinach
- 3 tbsp tomato pesto
- 10 tomatoes
- 2 Tbsp sunflower seeds
- Black pepper
- Nutritional yeast to sprinkle
Slice the zucchini on a mandolin or any kind of slicer.
In a food processor mix 7 oz tofu with the tomato, salt and black pepper and set aside.
