Scrambled eggz

Ingredients

  • 2 cups chickpea flour
  • 2 cups quinoa flour
  • 2 tbsp. turmeric
  • 1 tbsp. salt
  • 1 tbsp. onion powder
  • 1 tbsp. garlic powder
  • Water (equal parts to the dry mix)
  • 1 tbsp. oil (for cooking)
  • Optional: veggies like tomato, onion, mushrooms, or spinach

Preparation

 

  1. Mix and store: In a bowl mix all the ingredients until they are thoroughly combined. Pour the mixture in an airtight container and store.
  2. Prepare the batter: When ready to cook, combine equal parts of the dry mix and water. For an individual serving, use ¼ cup of the mix and ¼ cup of water. Beat the mixture well, just like you would an egg.
  3. Add veggies: Stir in your favorite vegetables, such as tomato, onion, mushrooms, or spinach, to the batter.
  4. Cook the mix: Heat 1 tablespoon of oil in a non-stick frying pan and pour in the mixture. Let it expand in the pan.
  5. Scramble and serve: After two minutes, turn it over and scramble as you would with eggs. Cook until it is no longer wet and serve.
