Simple and savory plant-based dressing

No holiday meal is complete without stuffing. We used Pepperidge Farm’s cubed stuffing—Herb Seasoned, Sage & Onion, and Cornbread flavors are all plant-based. Most bagged mixes are vegan; just add a few ingredients and bake!

Ingredients

 

  • 1 12-oz. bag of cubed stuffing
  • 2 cups vegetable broth
  • ½ sweet onion, chopped
  • 3 stalks of celery, chopped 
  • ½ stick of butter

Preparation

 

  1. Preheat your oven to 350ºF. 
  2. Melt butter in a medium saucepan over medium-low heat. Add chopped onion and celery, and sauté for about 5 minutes, until the celery is crisp and the onions turn translucent.
  3. Add the vegetable stock and bring to a boil. Remove from heat. 
  4. Pour the vegetable stock mixture into a large bowl with the cubed stuffing. Mix until just combined. 
  5. Transfer your mixture into a casserole dish. Bake for 30-35 minutes, covered.
  6. Serve warm.
