Soy BBQ Ribs

Smoky and saucy, these soy BBQ ribs capture the comfort of a backyard classic without the meat. A sweet glaze caramelizes as they cook, making them a hit at cookouts, dinners with friends, or served with vegan mac and cheese.

  • 8.0 cups water (for boiling)
  • 10.0 pieces dried soy cutlets
  • .25 cups vegetable oil (for frying)
  • 2.0 cups BBQ sauce
  • 2.0 tbsp. soy sauce
  • 1.0 tsp. liquid smoke (optional)
  • .5 cups water (for sauce)
  • 3 tbsp. sugar
  • 1.0 tbsp. garlic powder
  • 1.0 tbsp. onion powder
  • 1.5 tsp. cornstarch

Preparation

 

  1. Cook the soy: Bring 8 cups of water to a boil. Add the soy cutlets and cook until softened, about 20 minutes. Drain, rinse, and squeeze out excess water.
  2. Fry the soy: Heat ¼ cup oil in a large skillet over medium heat. Fry the cutlets until golden brown on both sides. Remove and set aside.
  3. Make the sauce: In a bowl, whisk together BBQ sauce, soy sauce, liquid smoke (if using), ½ cup water, sugar, garlic powder, onion powder, and cornstarch until smooth.
  4. Marinate: Place the fried soy cutlets in the sauce and stir to coat. Let marinate for at least 20 minutes.
  5. Glaze the ribs: Return the cutlets and sauce to the skillet. Reduce heat and simmer until the sauce thickens and clings to the cutlets, about 15 minutes.
  6. Serve: Slice to your preferred thickness and serve hot.
