Tofu sandwich

Every sandwich deserves a hearty dose of protein. This simple recipe combines fried tofu and mushrooms, decadent vegan mayonnaise, and juicy tomato for a sandwich that’s perfect warm or packed to go. Just marinate, slice, fry, and assemble, then enjoy a sandwich so good you’ll be craving it again tomorrow! 

Ingredients

(SERVINGS: 2)

 

  • ½ block extra-firm tofu, drained and pressed
  • 4 tbsp. soy sauce
  • Oil for frying
  • Salt and pepper to taste
  • 2 giant mushrooms
  • 4 tbsp. vegan cream cheese or vegan mayonnaise
  • 4 slices whole grain bread
  • 1 cup red cabbage, shredded
  • 1 beefsteak tomato, sliced
  • 1 red onion, sliced
  • 2 cups fresh spinach

Preparation

 

  1. Marinate: Cut the pressed tofu in half and marinate in soy sauce for at least 2 hours. 
  2. Slice, fry, and season: In a large pan, slice the mushrooms and fry them with the tofu in hot oil. Season with salt and pepper. 
  3. Assemble: Spread cream cheese or mayonnaise on whole grain bread. Finely slice the red cabbage, tomato, and onion. Layer the bread with these ingredients, spreading them out evenly, and enjoy!

Tips

 

Instead of cream cheese or mayonnaise, you can also drizzle with mustard, ketchup, or barbecue sauce.
