Ingredients

  • 1 block of extra firm tofu
  • 2 tbsp. paprika
  • ½ tbsp. ground white pepper (or black pepper if unavailable)
  • ½ tbsp. garlic powder
  • ½ tbsp. onion powder
  • ½ tbsp. salt
  • 1 tsp. cumin powder
  • 1 tsp. clove powder
  • 4 tbsp. vegetable oil
  • 2 tbsp. soy sauce
  • Tortillas (for serving)
  • Chopped cilantro (for serving)
  • Chopped onion (for serving)
  • Lemon (for serving)
  • Hot sauce (for serving)

 

Preparation

 

  1. Prep: Preheat the oven to 350ºF. 
  2. Drain: Take the tofu out of the packaging and let it drain.
  3. Crumble: Using a fork, crumble the tofu in a bowl.
  4. Mix: In a separate bowl, combine all ingredients except the tofu.
  5. Combine: Pour the mixture over the crumbled tofu and mix well, avoiding overmixing.
  6. Bake: Spread the tofu mixture on a baking sheet and bake for 10 minutes to create a crunchy vegan chorizo.
  7. Heat: Warm the tortillas before assembling.
  8. Serve: Fill each tortilla with the spiced tofu chorizo and your favorite toppings.
  9. Enjoy: Top your tacos with chopped cilantro, onion, hot sauce, and a few drops of lemon.

 

Tips

Tip: For a stovetop version, refrigerate the spiced tofu for 15 minutes before cooking. Then, sauté it in a nonstick pan until it reaches a chorizo-like consistency.
