- 1.0 cups almonds, soaked the day before
- 4 tbsp. apple cider vinegar
- .25 cups unflavored coconut oil or dairy-free margarine
- .5 tbsp. salt
- .5 tbsp. garlic powder
- 1.0 tbsp. onion powder
- .5 cups water
- 3 tbsp. walnuts, chopped
- 3 tbsp. pumpkin seeds
- 3 tbsp. sunflower seeds
- 3 tbsp. sesame seeds
- .25 cups dried cranberries
Preparation
- Blend the base: Peel the almonds and place them in a food processor. Add the vinegar, coconut oil or margarine, salt, garlic powder, onion powder, and water. Process until smooth and paste-like, similar to cream cheese.
- Add mix-ins: Transfer the mixture to a container. Stir in the walnuts, pumpkin seeds, sunflower seeds, sesame seeds, and cranberries.
- Chill: Mix well, cover, and refrigerate for at least 30 minutes.
- Shape and serve: Shape with cling film like in the photo, or scoop into balls with an ice cream scoop.
