Vegan chorizo wraps with spinach

- 2.0 cups vegan chorizo
- 2.0 cups shredded vegan cheese
- .5 medium onion, chopped
- 1.0 clove garlic, minced
- salt and pepper to taste
- .25 cups oil
- 10 small flour tortillas
- hot sauce, for serving
- lettuce or freshly diced tomatoes, for serving
Preparation
- Mix: In a bowl, mix the chorizo, grated vegan cheese, onion, salt and pepper, and minced garlic.
- Fry: Heat 3 tablespoons of oil in a skillet and fry the mixture for 10 minutes, stirring constantly over medium-low heat.
- Assemble: Heat both sides of the flour tortillas in a lightly oiled pan. Top each one with the mixture and roll it into a wrap. Place it back on the skillet, fold side down, cooking until browned. Serve with your favorite hot sauce.
Tips
To balance the hot sauce, add some cool, refreshing lettuce or freshly diced tomatoes.
