Vegetable Soup
Is there anything more comforting than a bowl of hot soup? This soup is rich and delicious, perfect for a starter or a light meal. Have it with garlic bread and it is just sublime. And it’s great for when you need to use up your veggies.
Preparation Time: 35 minutesIngredients
- 1 onion chopped
- 120g cauliflower
- 120g broccoli
- 250g carrots sliced
- 120g leek sliced
- 10 cherry tomatoes
- 1 vegetable cube
- 10g parsley
- 1 1/2 liters water
- Black pepper
- Salt
Preparation
- Sauté the onion.
- Add the rest of the ingredients, apart from the water and tomatoes, and cook for 10 minutes.
- Add the boiling water and cook for 15 minutes.
- Turn off, add the tomatoes and blend the ingredient on a blender or with a hand blender.
- Serve and Enjoy.
