Vegetable Soup

Is there anything more comforting than a bowl of hot soup?  This soup is rich and delicious, perfect for a starter or a light meal. Have it with garlic bread and it is just sublime. And it’s great for when you need to use up your veggies.

Preparation Time: 35 minutes


  • 1 onion chopped
  • 120g cauliflower
  • 120g broccoli
  • 250g carrots sliced
  • 120g leek sliced
  • 10 cherry tomatoes
  • 1 vegetable cube
  • 10g parsley
  • 1 1/2 litres water
  • Black pepper
  • Salt


Sauté the onion.
Add the rest of the ingredients, apart from the water and tomatoes, and cook for 10 minutes. Add the boiling water and cook for 15 minutes.

Turn the hob off, add the tomatoes and blend the ingredient on a blender or with a hand blender.
Serve and Enjoy.
