Almost as beautiful as it is delicious, this easy to make recipe is packed full of nutritious ingredients. The quinoa, beans, and avocado make for a great base while the lemon and tahini give it a tasty kick.
- 1/2 cup of cooked quinoa
- 1 avocado
- 1 cup of green beans
- 1 cup of kale
- 1 dash of lemon
- 1 tablespoon of tahini
- Optional: other nutritious veggies, nuts or seeds
After cooking the quinoa, combine all of the veggies in a large bowl. Mix the tahini and lemon for the dressing on top. For an extra nutritional boost, add roasted brussels sprouts and/or pumpkin seeds. Time to glow – inside and out!
